3 Healthy (and DELICIOUS) Instant Pot Recipes – Plus INSTANT POT GIVEAWAY!

Recipe 1: Quinoa and Black Bean Chili
Ingredients:
- 1 cup quinoa, rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14 oz) diced tomatoes, with juices
- 1 cup corn (fresh, frozen, or canned)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 4 cups vegetable broth
Instructions:
Sauté Vegetables: Start by using the Sauté function on your Instant Pot. Add a splash of olive oil, followed by the onions, garlic, and bell pepper. Sauté for about 3-5 minutes until softened.
Add Other Ingredients: Add in the quinoa, black beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Pour the vegetable broth over the ingredients.
Cook: Seal the lid and set the Instant Pot to High Pressure for 10 minutes. Once cooking is complete, allow the pressure to naturally release for 10 minutes before performing a quick release.
- Serve: Stir well, taste for seasoning, and adjust if necessary. Serve hot, garnished with avocado, cilantro, or a dollop of Greek yogurt.
Recipe 2: Lemon Garlic Chicken and Veggies
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- Salt and pepper, to taste
- 2 cups mixed vegetables (e.g., carrots, broccoli, bell peppers)
Instructions:
Prepare Chicken: In a small bowl, mix lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Place the chicken breasts in a bowl and coat them with the marinade for at least 30 minutes, if time allows.
Sauté Chicken: Using the Sauté function on your Instant Pot, add a touch of olive oil. Once hot, add the marinated chicken breasts and sear for about 3 minutes on each side until golden brown.
Add broth and veggies: Pour the chicken broth into the pot and add the mixed vegetables on top.
Cook: Close the lid and set to High Pressure for 10 minutes. Allow for a natural pressure release.
- Serve: Remove the chicken and veggies, drizzle with additional lemon juice if desired, and serve warm.
Recipe 3: Creamy Mushroom Risotto
Ingredients:
- 1 cup Arborio rice
- 4 cups low-sodium vegetable broth
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup Parmesan cheese (optional)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions:
Sauté Ingredients: Set the Instant Pot to Sauté mode, and heat olive oil. Add the onions and garlic, cooking for 2-3 minutes until fragrant. Stir in the mushrooms and cook until softened.
Add Rice: Stir in Arborio rice and toast the grains for about 2 minutes.
Cook: Pour in the vegetable broth and close the lid. Set to High Pressure for 6 minutes followed by a quick release.
- Finish: Stir in Parmesan cheese (if using), salt, and pepper. Allow the risotto to rest for a few minutes, then serve garnished with fresh parsley.
